Gramma Alice's little cookbook

These recipes came from my Great-Grandmother, Alice Lucia Lambermont Sinz, who married my Great-Grandfather Charles Henry Sinz sometime before 1911. ( I don't have the date yet, though I'm working on it!)

When their son, Charles Anthony, my grandfather, died in 1995, he left me a small payroll book that Grandma Alice had used to write several recipes in. The book is old enough that where the date is to be added, one can see '190___'. All but 1 are in her own handwriting. I am going to leave these recipes as Grandma Alice wrote them, trying to keep her spelling spacing, and phrasing. Many do not have instructions.

Grandma Alice passed away in 1971 after raising 7 children to adulthood using these same recipes to provide for and treat her family. I hope you enjoy them as much as I do!

French Mustard Pickles

2 qts. green tomatoes
2 '' string beans (cook)
2 '' cucumbers
2 '' little onions
2 hds. cauliflower (cook)
1 small hd. cabbage
6 green peppers
1 bunch celery
1 lb. lima beans (cook)
Add 1 cup salt and scald
let stand over night and drain in the morning.


1 gal. vinegar
1 cup flour
2 cups sugar
1 teasponful turmeric
1/2 lb. coleman's mustard
mix in a smooth paste with a little vinegar. mix dressing. Let come to boil. Then put in vegetables. Let come to boil & can.

Uncle Dick's Pickles

Cube & peel 1 gallon large cucumbers
2 medium sized onions
1 1/2 cup sugar
1 tbsp. of mustard
1 tsp. of allspice
1 tsp. of turmeric
1/2 cup salt
cook till tender

Place cool cucumbers in scalding water. Add salt and leave stand over night. Drain and boil in vinegar. Tie allspice up in cloth.

Indian Relish

1/2 pk green tomatoes
3 hds cabbage
3 bunches celery
10 sweet peppers, red & green
2 hot ''
8 onions
grind or cut fine
salt and let stand overnight, drain and pour boiling water, drain off

add vinegar and 1/2 as much water, 2 1/2 cups brown sugar
2 oz. mustard seed
1/2 oz. celery seed 1 tsp dry mustard some turmeric.
boil altogether a little while then can.


1 gal green tomatoes sliced
1 qt. onions sliced
3 red or green peppers
salt over night no water, drain in morning and run cold water over.
Add 1qt vinegar
1 pt water
2 cups white & brown sugar
1 tsp dry mustard
boil 1 teaspoon pickling spices in a little vinegar
take spices out then add vinegar to piccalily
11 tsp turmeric
Cook a little while and jar or put in crocks.

Saccharine Pickles

Wash pack pickles in jars add a few whole cloves and a few cinnamon sticks.

To gal vinegar
add 1 qt water or more
1 tsp Saccharine
1/2 cup salt
let come to boil and pour over pickles

Fruit cake

1/2 cup shortening
1 cup gran. sugar
2 cups brown sugar
2 eggs
1 cup cooked raisins
1 1/2 cups raisin water
2 cups flour
1/2 teaspoon each cloves, cinnamon & nutmeg.
1 teaspoon soda.
1 teaspoon baking pd.

Bake in slow oven 1 hr.

Mollies Mustard Pickles with saccarine

1 cup salt
1 '' dry mustard
1 teaspoon saccarine
1 qt water
3 qts vinegar
Mix altogether then pour on packed pickles in jars & seal up tight

If all the vinegar mixture is not used store away until nextbatch of pickles are ready to be canned.

Goose & Raspberry jam

1 rounding qt goose berries
1 qt raspberry
2 qt sugar
cook g. berries 5 min.
add R. '' & sugar
then boil 15 min or a little longer, cool and jar.

For Whole Canned peppers

Washpeppers do not cut
pack in jars, 1 teaspoon salt
fill jar half vinegar
half water & seal.
will taste & keep better with one hot pepper in jar


1/2 gal cut beans
3 1/2 cups water
1/2 cup vinegar
1 level tablespoon salt
cook 5 min & jar airtight.

Marie ODonnell

Fried tomatoes & peppers.

Slice about 1 doz peppers longways
Slice about 7-8 tomatoes
Fry in a little olive oil
Salt & pepper to taste while frying and add 2 slices garlic
Cook till tender, stir often to keep from sticking

Peach Cake

2 tbsp butter
1 big cup sugar
1 egg
1 big cup milk
2 1/2 cups flour
2 1/2 tsp. baking pwd.
1 teasp. vanilla
good pinch of salt
mix butter & sugar
put in egg, add milk
sift flour & bk. pwd

Put brown sugar in bottom of pans then apples or peaches,
put the cake dough on peaches.

Be sure to put cinnamon on top of apples

Apple sauce cake.

1 1/2 cups sugar (2)
1 1/2 cups apple sauce (3)
1/2 cup shortening (scant)
2 cups flour
1 cup raisins last
3 level teaspoon soda
1 teaspoon cinnamon (2)
1 '' nutmeg
1 '' cloves (1/2)

Spice Cake

1 1/2 cups brown sugar
1/2 cup shortening
2 eggs
1 cup sour milk
1 teaspoon soda in milk
1/2 '' cloves.
1/2 '' cinnamon.
1/2 '' nutmeg.
2 cups flour.
2 teaspoons baking pd.
1/4 t. salt (**This was added later**)

Devil's cake or Chocolate cake

2 cups sugar.
1 pinch salt
8 teaspoonful cocoa
4 cups flour
8 teaspoon lard
2 cups sour milk or buttermilk
2 teaspoons vanilla
2 teaspoons soda
1 teaspoon b. pd
Bake 30 min.

Nut Cake

1/2 cup shortening
1 1/2 cup sugar
3 egg yolks
1 cup milk
2 1/2 cups flour
1 1/2 teaspoon baking powder
pinch salt
1 cup chopped nuts
1 teaspoon vanilla
fold in 3 whites beaten stiff

bake in 2 medium sized bread pans.

This is a dandy cake.

3 eggs well beaten
1 1/2 cups brown sugar
1 cup lard
1 teaspoon cinnamon
1 teaspoon soda in warm water
1 little bit cloves
1/2 cup raisins
1 1/2 cups walmuts
2 cups flour
a little salt

Tuttie Fruttie

1 cup sugar
1/2 cup shortening
1 egg
1/2 cup raisins ground
1 teas. soda
1 cup sour milk
2 tablespoons vinegar
2 heaping tablespoons cocoa
1 1/2 cup flour
1/2 cup nuts

Nut Bread

3 level cups pastry flour
1 '' '' sugar
6 '' teaspoons baking powder
1 '' '' salt
1 '' cup chopped nut meats
1 egg beaten light
1 cup sweet milk

Pass the dry ingredients through a sieve together twice; add the nuts then the beaten egg mixed with the milk and mix to a dough. turn into a well greased brick loaf pan
let stand fifteen minutes then bake about forty five minutes. For a change use one third Graham flour.

Banana Cream Cake.

Mix in rotation
1 cup sugar
1/2 '' shortening
2 eggs
1 cup banana
1 cup milk
2 '' flour
1 teaspoon soda in 1/2 cup boiling water
1 teaspoon vanilla

Kit Enrights recipe

Smith's Candy Recipe

3 cups gran. sugar
3 tablespoons cocoa
1 1/2 cups milk

Cook until soft ball in water. When removed from fire put in lump of butter about twice as large as a walnut, and a teaspoon ov vanilla. Then put a pan of candy in water to cool. When cool, beat until glossy. Do not stir until cool. Put on plates & cut in squares. Nuts or coconut may be added.

My Fudge Recipe

6 cups g. sugar
1 tbsp cocoa.
1 1/2 cups milk &
1/2 cup can milk
piece of butter size of walnut
pinch salt
Cook until soft ball in water, remove from fire add 3 tbsp. creme marshmellow and 1 tbsp vanilla beat until creamy pour in buttered pan or 2 nuts can be added.

Molasses Cookies

1 cup sugar gran.
1 scant cup shortening
1/2 teaspoon salt.
2 tablespoon vinegar
2 cups molasses
1 cup hot water
3 teaspoons soda.
flour to stiffen.

Mix well altogether, do not beat.

Mrs. Talliers recipe.

Fudge Frosting

2 sqs. unsweetened choc. shredded
2/3 cup cold milk
2 cups sugar
2 tbsp. light corn syrup
2 '' butter
1 teaspoon vanilla
pinch salt
Put chocolate and milk over a very low fire, and hat gradually until choc. is melted. Then beat with a Dover egg beater until mixture is smooth and blended. Add sugar, salt and corn syrup and stir untilthe sugar is dissolved and the mixture boils. Continue cooking without stirring until the very soft ball when tried in cold water. Remove from fire add butter and vanilla. Let cool till lukewarm. Beat until of right consistency to spread.

Royal Cream Loaf Cake

Cream 1/2 cup shortening well with 1 cup sugar; add 2 egg yolks; add 1 teaspoon lemon extract; add a little at at ime, 1/2 cup rich milk or thin cream. Add 1 cup flour sifted with 1/2 cup cornstarch and 3 level teaspoons Royal Baking Powder. Fold in 2 beaten egg whites and bake in greased loaf pan in moderate oven about 45 minutes. Make Frosting as follows -- Put 1 unbeaten egg white into shallow dish; add 1 1/2 cups confectioner's sugar gradually beating with wire whip until of right consistency to spread; add 1 teaspoon vanilla nad spread on top and sides of cake.

This recipe is found pinned in Gramma Alice's payroll book, and is on the reverse side of a paper label from Royal Baking Powder. There is a statement following the recipe:

Filled, or Plain Cookies

3/4 cup sugar
1/2 '' shortening
1 egg
1/2 cup milk
1 teaspoon vanilla
2 '' baking pd.
1 '' soda
1/2 '' salt
2 1/2 cups flour or enough flour to roll.
(To the side written up the page, Grandma Alice wrote:
Add a little nutmeg if you want it.)

Raisin Spice Cake

3 cups sugar (at a later time, Grandma Alice added "half brown")
1 1/2 cups shortening
4 eggs, whites in or out
3 cups sour milk
2 teaspoon cinnamon
1 cloves
1 nutmeg
1 maple flavor
(In paranthesis Grandma Alice wrote:
3 tsp. soda
2 '' baking pd.
and off to the right is the word "level")
flour enough like a cake.
1 big cup raisins
nuts can be added.

(In a box Grandma Alice wrote "My own make up")

The following recipe is on small piece of paper, folded and inserted into the payroll book. It is printed in all capital letters, and I can't tell if it's Grandma Alice's writing or not. It almost looks like my grandfathers.



Cinnamon Coffee Cake

3 cups flour
1 teaspn salt
1 cup sugar (half white or brown)
4 1/2 teaspn Bk. Pd.
1 1/2 '' cinnamon
1 egg
3 tablespn melted butter
1 1/2 cup milk

Sift flour, salt sugar, baking pd. together
put in butter
beat egg well add to milk
and to dry ingredients and beat well.
Sprinkle with nuts on top
'' '' brown sugar on top.

My Birthday Cake

1 cup shortening
2 scant sugar
2 1/2 cup milk
4 egg yolks, 2 whites
2 teaspoon vanilla
2 '' orange flavor
7 teaspoon (and just above Grandma Alice wrote "or 8 rounding") baking pd. level
1 pinch salt
flour enough for cake
bake in moderate oven
Frost with white icing anc cocoanut

Sauce for ginger bread or any cake

Marshmallow sauce

1/2 cup orange juice
cook 2 teaspoon cornstarch with juice,

then add 1/2 cup finely cut marshmallows + 1 1/2 cups sections of oranges cut up.

The following recipe is written in pen with penciled in amounts and instructions to the right. The items I put in brackets Grandma Alice wrote in pencil.

Ginger Bread

1/2 Cup lard [3/4]
1/2 '' sugar [3/4]
1 egg [2]
1 cup molasses [1 1/2]
2 1/2 cup flour [3 3/4]
1 1/2 teaspoon soda [2 1/4]
1/2 '' ginger [3/4]
1 '' cinnamon [1 1/2]
1/2 '' cloves [3/4]
1/2 '' salt [3/4]
1 cup hot water (add hot water last) [1/2]

Mix in order given. Bake in a 325° oven for about 15 or 20 min. then increase the heat to 350° and finish baking to make it 35 min. or till done.

[serve with whipped cream or a good sauce]

Prune Pudding

1 cup cooked prunes
seeded and chopped
1/2 cupful sugar
1 cupful chopped nuts
1/2 cupful milk or prune water
1 teaspoonful vanilla
1 tabelspoonful butter or substitute melted
1/2 cupful crackers (rolled fine) or
1/2 cupful dried bread crumbs
1 tespoon baking powder

Mix all the ingredients. Pour into a buttered baking dish Bake in a moderate oven (350°F)for 30 to 40 minutes, or until the mixture is firm. Serve hot or cold with plain or whipped cream.

Peanut Butter Cookies

2 1/2 cups flour
3 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon salt
1 egg
1 cupful sugar
3/4 cup peanut butter
1 cupful sour milk,/p>

Mix and bake as Sugar Cookies. It is especially necessary to make the dough for these cookies very soft. It requires skilful handling.

Mrs. Jack Schmitzer's Chocolate Cake

1 c. brown sugar
1 c. white ''
1/2 c. lard or butter
2 eggs
6 tablespns cocoa
3 cups flour + 1 t baking pd
1 teaspoon vanilla
1 cup sour milk
2 level teasp. soda
1 cup boiling water
1/4 t. salt

Sour Cream Cookies

1/3 c. fat
1 c. sugar
1 egg
1/2 teaspoon salt
1/2 c. sour cream
1 tsp. baking soda
2 tsp. cream of tartar
1/2 tsp. nutmeg
3 1/2 c. flour
(Added off to the side, Grandma Alice wrote "1 vanilla")

Cream fat and all sugar gradually then eggs well beaten. Then add milk and flour sifted with soda, cream of tartar and nutmeg. Put dough in a cool place and chill. Roll out in small portions. Cut and bake about 10 minutes

My Prune Pudding Cake

All level measures
1 cup prunes cooked & chopped
1/2 '' sugar or more if prunes are not sweetened
1/2 cup prune juice
1/2 '' milk
1/2 '' chopped nuts
1 1/4 '' flour
1/2 '' cracker crumbs
2 teaspoon bak. pd.
1 '' vanilla
1 pinch salt

serve with sauce or plain bake 325 about 30 min or until firm
increase heat after 15 min.
